Peach Cobbler

This is such a simple summer dessert that utilizes our favorite summer fruit, peaches!

Ingredients

  • 4 large (or 6 small) peaches
  • juice of ½ lemon
  • cinnamon and sugar, sprinkle to taste
  • ½ cup melted butter (1 stick)
  • ½ cup sugar
  • 1 cup flour
  • 1 egg, lightly beaten
  • pinch of salt

Instructions

  • Preheat oven to 350 degrees. Thinly slice peaches (I keep skins on, but feel free to peel if you prefer) into a mixing bowl. Drizzle lemon juice over peaches and sprinkle with cinnamon and sugar to taste. Gently stir to combine. Add peach mixture to a greased 8x8 baking pan.
  • In the same mixing bowl, add melted butter, sugar, flour, egg and salt, and stir until well combined. Do not beat! Batter will be thick.
  • Using a rubber spatula, cover the fruit with batter, pressing to distribute evenly. Bake at 350 degrees for 35-40 minutes, or until top is crisp and brown. Serve with vanilla ice cream. Enjoy!
