Greek Pasta Salad

This Greek Pasta Salad is quick and easy to make and is perfect for all those summer gatherings! A light and refreshing side that easily feeds a crowd!

Ingredients

For the salad:

  • 12 oz dry pasta
  • 1 english cucumber, diced
  • 1 pint cherry or grape tomatoes, halved
  • 1 cup sliced kalamata olives
  • 4 oz crumbled feta cheese
  • 1/2 medium red onion, finely diced

For the vinaigrette dressing:

  • 3 tbsp red wine vinegar
  • 1 tbsp fresh lemon juice
  • ¼ cup olive oil
  • 2 tsp dried Italian seasoning
  • 1 garlic clove, minced
  • ½ tsp kosher salt
  • few grinds of freshly cracked pepper

Instructions

  • Cook the pasta al dente. Drain and rinse under cold water to chill. Transfer pasta to a large serving bowl.
  • In a liquid measuring cup, whisk all vinaigrette dressing ingredients until combined.
  • Add cucumber, tomatoes, olives, feta, and red onion to the serving bowl. Drizzle the vinaigrette dressing on top and toss until all the salad ingredients are evenly coated.
  • Serve immediately or refrigerate until ready to serve.

Notes

To save time and energy, substitute store-bought Greek vinaigrette dressing. We love Ken's Steak House Greek Simply Vinaigrette (found at our local Safeway).
