In a gallon ziplock bag, combine chicken chunks and Greek dressing. Seal and marinate for at least 2 hours to overnight, turning occasionally. Drain chicken from the marinade.
You can either cook chicken in a skillet with olive oil on the stovetop or put chunks on skewers and grill. Either option, cook chicken, turning occasionally, until chicken is completely cooked through (internal temperature of 165 degrees). Remove from heat and place on serving platter.
