Gluten-Free Creamy Parmesan Pasta

This is my family's favorite gluten-free pasta dish! My kids would normally have an opinion about GF noodles, but they're a fan of this meal! It's super simple and packed with tons of flavor. With just a few ingredients, buying quality really makes a difference!

Ingredients

  • 12 oz pasta (we use Jovial's gluten-free fusilli)
  • 5 garlic cloves, minced
  • 1 cup parmesan cheese, grated (use good parmesan, as this is the base of the recipe)
  • Add your favorite pre-cooked protein and veggie

Instructions

  • Bring a large pot of water to a boil for the pasta.
  • While the water is heating up, melt 1 tbsp of ghee in a large pan or dutch oven on medium-low heat. Add minced garlic and cook for 2 minutes until golden brown. Add pre-cooked protein or veggie (if using) with ⅓ tsp salt and a few cracks of pepper, until heated through. Remove from heat.
  • Add 1 tbsp salt to the boiling water and cook the pasta according to the box instructions. Save 1 cup of the pasta cooking liquid and drain.
  • Place the pan with garlic (and veggies/meat, if using) over medium-low heat and add the pasta. Add 1 cup of grated parmesan to the pan with a splash of the pasta water, stirring quickly until it becomes a smooth, creamy sauce. Continue stirring until all the cheese is blended in, adding pasta water as needed.
  • Serve immediately. Enjoy!

Notes

Note: I buy a wedge of parmesan cheese from Whole Foods or Trader Joe's, do not skimp on quality here! There are only a few ingredients in this recipe, so it really makes a difference. I chop the cheese wedge into 1" chunks and then throw in the food processor with the standard blade, until grated uniformly.
