Ingredients
3lb beef chuck roast
116 ozjar whole peperoncinis (mild)juice included
2tspkosher salt
shredded mozzarellato melt on sandwich
buns
Instructions
Put beef, peperoncinis with juice, and salt in slow cooker. Cook on low for 8 hours.
Shred meat in slow cooker with two forks and stir in juices. Put meat and a small handful of cheese on a bun. Either melt in microwave for 30 seconds, or place under broiler for 1 minute. (If using broiler, watch closely to avoid burning!).
Notes
A few of my kids aren't crazy about peperoncinis. So, before shredding the beef, I use tongs to take peperoncinis out and serve them separately in a small bowl for those that want to add them on top of their sandwich. This recipe also works well with a frozen roast, same cook time!
