Easy Slow Cooker Peperoncini Beef Sandwiches

Ingredients

  • 3 lb beef chuck roast
  • 1 16 oz jar whole peperoncinis (mild) juice included
  • 2 tsp kosher salt
  • shredded mozzarella to melt on sandwich
  • buns

Instructions

  • Put beef, peperoncinis with juice, and salt in slow cooker. Cook on low for 8 hours.
  • Shred meat in slow cooker with two forks and stir in juices. Put meat and a small handful of cheese on a bun. Either melt in microwave for 30 seconds, or place under broiler for 1 minute. (If using broiler, watch closely to avoid burning!).

Notes

A few of my kids aren't crazy about peperoncinis. So, before shredding the beef, I use tongs to take peperoncinis out and serve them separately in a small bowl for those that want to add them on top of their sandwich. 
This recipe also works well with a frozen roast, same cook time!
