Memorial Day is coming up in a few weeks! I can hardly believe we’re in the home stretch for this school year! It has literally flown by.
Memorial Day usually kicks off our summer and we are giddy about using our pool this summer. This is our first summer with a pool and patio. Bring on the pool parties, family time, and living in our swim suits!
We are also grateful for the freedom to be able to celebrate and enjoy good food and good times with those we love, because of the sacrifices made by members of the military and their families (especially those military mamas!).
Today, I’m sharing a patriotic red, white and blue salad recipe, my Spinach Berry Salad with Champagne Vinaigrette. The perfect dish to make as a healthy option for your Memorial Day gathering!
I like using champagne vineger for my salad dressing, which I find at our local Safeway. If you can’t find it in your area, apple cider vinegar is a good alternative.
Spinach and Berries Salad with Champagne Vinaigrette
Ingredients
- fresh baby spinach leaves (we used a 6 oz bag)
- ½ cup sliced strawberries
- ½ cup blueberries
- ½ cup raspberries
- 2 tbsp feta cheese
- 2 tbsp chopped red onion
- ½ cup slivered almonds
For the vinaigrette:
- 1 garlic clove, minced
- ½ tsp dijon mustard
- 3 tbsp champagne vinegar (can substitute apple cider vinegar)
- ½ cup olive oil
- ½ tsp kosher salt
- a few grinds of fresh black pepper
Instructions
- Place spinach in a large salad bowl. Top with berries, feta, red onion, and almonds.
- For the vinaigrette, whisk all the ingredients together.
- Drizzle salad dressing over top of the salad and toss. Serve immediately. Enjoy!
