This is probably the most requested dinner by all four of my kids, come January.
The first time we ever tried it was when my sister-in-law, Meg, served it to us for dinner. My kids talked about it non-stop afterwards. I made a few tweaks to her original recipe, and it continues to be a family favorite!
I personally love it because it’s a great way to sneak in kale. It’s warm, hearty, salty and has veggies to boot. Perfect for a cozy, winter night. And a bonus for a busy mom is that this soup comes together quickly with simple ingredients!
I serve it with crusty bread for a cozy, one-pot meal that always feels like a win in our home.

Sausage and Kale Soup
Ingredients
- 1 lb Italian sausage
- 1 onion, chopped
- 3 garlic cloves, minced
- 3 cups cubed potatoes
- 4 cups chicken stock
- ½ tsp dried oregano
- ¼ tsp crushed red pepper flakes
- few grinds fresh black pepper
- 4 cups chopped kale
- 1 cup whole milk (can sub half-and-half)
Instructions
- In a large pot or dutch oven, brown sausage over medium-high heat (about 10 minutes). Drain and discard grease. Lower heat and add onion and garlic, stir and cook for a few minutes.
- Add potatoes, chicken stock, oregano, and red pepper flakes. Stir and bring to a boil, then reduce heat to low. Simmer until potatoes are tender, about 30 minutes.
- Stir kale into soup. Season to taste with black pepper. Simmer until kale is tender, about 10 more minutes. Off the heat, stir in milk. Enjoy!
