This GREEK PASTA SALAD is so simple to throw together for a quick summer lunch, or add your favorite protein and serve it for a light dinner!
My kids love anything Mediterranean. My middle two kids, specifically, have been known to throw back a whole jar of kalamata olives in one sitting! So this spin on pasta salad is a favorite around here.
With fresh veggies, greek olives, salami, feta, and a light lemon-y greek vinaigrette, this is the perfect dish to bring to a gathering!
Greek Pasta Salad
This Greek Pasta Salad is quick and easy to make and is perfect for all those summer gatherings! A light and refreshing side that easily feeds a crowd!
Ingredients
For the salad:
- 12 oz dry pasta
- 1 english cucumber, diced
- 1 pint cherry or grape tomatoes, halved
- 1 cup sliced kalamata olives
- 4 oz crumbled feta cheese
- 1/2 medium red onion, finely diced
For the vinaigrette dressing:
- 3 tbsp red wine vinegar
- 1 tbsp fresh lemon juice
- ¼ cup olive oil
- 2 tsp dried Italian seasoning
- 1 garlic clove, minced
- ½ tsp kosher salt
- few grinds of freshly cracked pepper
Instructions
- Cook the pasta al dente. Drain and rinse under cold water to chill. Transfer pasta to a large serving bowl.
- In a liquid measuring cup, whisk all vinaigrette dressing ingredients until combined.
- Add cucumber, tomatoes, olives, feta, and red onion to the serving bowl. Drizzle the vinaigrette dressing on top and toss until all the salad ingredients are evenly coated.
- Serve immediately or refrigerate until ready to serve.
Notes
To save time and energy, substitute store-bought Greek vinaigrette dressing. We love Ken’s Steak House Greek Simply Vinaigrette (found at our local Safeway).
