This is a favorite summer weeknight meal for the Grossmans. Whenever I make this meal, I always ask myself, “Why don’t I make this more often?!”. Little to no prep and on the table in no time.

I bought these at our local Whole Foods, but Trader Joe’s also has delicious versions.

Greek Chicken Tacos
Get this greek spin on tacos to your table in no time at all! It's more like a chicken gyro and my kids gobble it up each and every time!
Ingredients
- 2 lbs boneless, skinless chicken thighs, cut into 1-inch chunks
- 1/2 cup Greek salad dressing
For the fixings:
- grape tomatoes, halved
- sliced cucumbers
- chopped romaine
- pitted kalamata olives
- red onion, thinly sliced
- feta cheese
- tzatziki sauce (I use pre-made from Trader Joe's)
- lemon wedges
- naan (I use naan from Trader Joe's, found in frozen section)
- hummus
Instructions
- In a gallon ziplock bag, combine chicken chunks and Greek dressing. Seal and marinate for at least 2 hours to overnight, turning occasionally. Drain chicken from the marinade.
- You can either cook chicken in a skillet with olive oil on the stovetop or put chunks on skewers and grill. Either option, cook chicken, turning occasionally, until chicken is completely cooked through (internal temperature of 165 degrees). Remove from heat and place on serving platter.
- Serve alongside greek fixings. Enjoy!
