
Today is the day!!! Ryan gets home from globetrotting halfway around the world! Girls are away at camp all week, so they miss each other by a day. But the boys and I couldn’t be more excited to have our main man back home! Which, by the way, Noah has referred to himself as “the man of the house” for the last couple of weeks. 😂
Today I’m sharing this super simple, but delicious, gluten-free pasta dish. It’s one of our favorites! My kids can usually quickly detect when I’ve substituted with GF noodles, but this brand below is hands-down a winner at our house!

I buy Jovial pasta in bulk on Amazon. This ghee pictured, I picked up from Whole Foods, but you can also find it on Amazon. I typically use peeled garlic to cook with in order to save myself a step.
You can mix and match this pasta recipe with any of your favorite additions. This particular day, I went with chicken (pre-cooked from Trader Joe’s) and broccoli florets.

Other times, I’ve added mushroom and kale. Or you can keep it simple with just noodles and sauce, it’s definitely flavorful enough on it’s own!
I promise you will not have leftovers with this one. 😉

Gluten-Free Creamy Parmesan Pasta
Ingredients
- 12 oz pasta (we use Jovial's gluten-free fusilli)
- 5 garlic cloves, minced
- 1 cup parmesan cheese, grated (use good parmesan, as this is the base of the recipe)
- Add your favorite pre-cooked protein and veggie
Instructions
- Bring a large pot of water to a boil for the pasta.
- While the water is heating up, melt 1 tbsp of ghee in a large pan or dutch oven on medium-low heat. Add minced garlic and cook for 2 minutes until golden brown. Add pre-cooked protein or veggie (if using) with ⅓ tsp salt and a few cracks of pepper, until heated through. Remove from heat.
- Add 1 tbsp salt to the boiling water and cook the pasta according to the box instructions. Save 1 cup of the pasta cooking liquid and drain.
- Place the pan with garlic (and veggies/meat, if using) over medium-low heat and add the pasta. Add 1 cup of grated parmesan to the pan with a splash of the pasta water, stirring quickly until it becomes a smooth, creamy sauce. Continue stirring until all the cheese is blended in, adding pasta water as needed.
- Serve immediately. Enjoy!
