This is such a simple summer dessert! Perfect for peach season. This summer we’ve been taking advantage of our local farm stand that sells “bruised” peaches in a big box for cheap! They are slightly bruised, but in no way is flavor or texture compromised! The best part is that they are perfectly ripe and ready to eat right away. So I’m excited to come up with ways to use all these peaches!
For today, try this one! Other than the peaches, I almost always have the ingredients on-hand in my pantry year-round!
Peach Cobbler
This is such a simple summer dessert that utilizes our favorite summer fruit, peaches!
Ingredients
- 4 large (or 6 small) peaches
- juice of ½ lemon
- cinnamon and sugar, sprinkle to taste
- ½ cup melted butter (1 stick)
- ½ cup sugar
- 1 cup flour
- 1 egg, lightly beaten
- pinch of salt
Instructions
- Preheat oven to 350 degrees. Thinly slice peaches (I keep skins on, but feel free to peel if you prefer) into a mixing bowl. Drizzle lemon juice over peaches and sprinkle with cinnamon and sugar to taste. Gently stir to combine. Add peach mixture to a greased 8×8 baking pan.
- In the same mixing bowl, add melted butter, sugar, flour, egg and salt, and stir until well combined. Do not beat! Batter will be thick.
- Using a rubber spatula, cover the fruit with batter, pressing to distribute evenly. Bake at 350 degrees for 35-40 minutes, or until top is crisp and brown. Serve with vanilla ice cream. Enjoy!
