Today, I’m sharing another super simple, family favorite, that takes no time at all to prep. All you need is three ingredients, toss them in your slow cooker, and you have an amazing meal ready to go on a busy, weeknight. You’re welcome! 😉

Easy Slow Cooker Peperoncini Beef Sandwiches
The perfect no-prep slow cooker recipe for a busy weeknight!
Ingredients
- 3 lb beef chuck roast
- 1 16 oz jar whole peperoncinis (mild) juice included
- 2 tsp kosher salt
- shredded mozzarella to melt on sandwich
- buns
Instructions
- Put beef, peperoncinis with juice, and salt in slow cooker. Cook on low for 8 hours.
- Shred meat in slow cooker with two forks and stir in juices. Put meat and a small handful of cheese on a bun. Either melt in microwave for 30 seconds, or place under broiler for 1 minute. (If using broiler, watch closely to avoid burning!).
Notes
A few of my kids aren’t crazy about peperoncinis. So, before shredding the beef, I use tongs to take peperoncinis out and serve them separately in a small bowl for those that want to add them on top of their sandwich.
This recipe also works well with a frozen roast, same cook time!
