As the weather gets warmer, we love a simple sausage supper! Throw in some fresh veggies, and dinner is made! Simple, healthy and a one-pot wonder.
I usually pick out a variety of chicken sausage from Trader Joe’s, but any smoked pork sausage will do, if that’s more your style. My family enjoys this with a side of rice or quinoa. Get your patio ready!
Sausage and Veggie Skillet
This simple Sausage and Veggies Skillet recipes is perfect for a busy weeknight. Plus, with it being a one-pot dish, cleanup is super easy! This recipe features bell peppers, zucchini, onion and green onions. You will have dinner on the table in less than 30 minutes!
Ingredients
- 1 tbsp olive oil
- 2 (12 oz) pkgs fully cooked sausage, sliced
- ½ red onion, chopped
- 1 red bell pepper, chopped
- 1 zucchini, sliced and halved
- ½ tsp chili powder
- ½ tsp kosher salt
- a few grinds of fresh pepper
- sliced green onions for garnish
Instructions
- Heat 1 tbsp olive oil in a cast iron skillet over medium heat. Add sausage and cook for 10 minutes, until browned, stirring to cook evenly. Remove from skillet to a plate.
- Add veggies to skillet and cook for 5 minutes, until onions are translucent. Turn heat down to low, add sausage back in, then add chili powder, salt and pepper. Stir to combine. Off the heat, garnish with sliced green onions. Serve immediately. Enjoy!
