This is the bite-size version of our fall favorite! Nothing is cuter than these Pumpkin Pie Bites! Perfect for fall gatherings, festive school lunch treat or after-school “snack”. Let’s be honest, it’s good with coffee for breakfast, too! These mini pumpkin pies are the kinds of things I get giddy about! They’re almost too cute to eat!
Pumpkin Pie Bites
Pumpkin Pie Bites are a must for fall! These mini pumpkin pies will put you in the mood for those sweater weather days!
Ingredients
- 1 unbaked pie crust (either store bought or homemade)
- 1 (8 oz) package cream cheese, softened
- 1 cup pumpkin puree
- ¼ cup sugar
- 2 eggs
- 1 tsp pumpkin pie spice
- whipped cream (see notes)
Instructions
- Preheat oven to 350 degrees.
- Grease mini-muffin pan with nonstick cooking spray. Set aside.
- Roll pie crust out on a floured surface. Using a 3-inch round cookie cutter, cut out 12 circles. Carefully press each dough round into the mini muffin pan.
- Using an electric mixer, beat the softened cream cheese and sugar until smooth. Add eggs one at a time, beating each until combined. Add pumpkin puree and beat to combine. Mix in vanilla and pumpkin pie spice.
- Spoon mixture into mini pie crusts, filling almost to the top. Bake at 350 degrees for 15-20 minutes. Allow to cool. Top with whipped cream.
