My father-in-law made a version of this years ago and every summer I crave this dish! It’s perfect for throwing your garden fresh veggies in and creating a quick and easy summer dinner! Serve over rice and call it a day.
Ground Beef and Veggie Skillet
This quick and easy dish combines ground beef and whatever veggies you have growing in your summer garden, seasoned with just salt and pepper. Serve over rice for a fresh, light, super simple dinner!
Ingredients
- 1 lb ground beef
- 1 zuchini, sliced
- 1 yellow squash, sliced
- 1 large tomato, diced
- salt and pepper to taste
- 1 8 oz package of fresh mozzarella, sliced
Instructions
- In a large skillet over medium-high heat, brown ground beef. Once browned, drain grease if needed. Add veggies and stir together. Season with salt and pepper, to taste. Simmer for 10 minutes until veggies are softened, stirring a few times. (Add small amounts of water into mixture if it gets too dry).
- Top mixture with sliced fresh mozzarella and cook for another 5 minutes until cheese is melted. Remove from heat and serve over rice.
That’s it! Super simple, right? And the best part is only one pot to clean after dinner.
