This light and refreshing salad is the perfect starter for any meal, or add chicken on top to make this salad for a light meal.
I’m the only one in my family that enjoys blue cheese, so I often will leave the cheese on the side for my own partaking. It’s such a sad and disappointing reality. Either way, it is the perfect salad to brighten up a dreary winter day!
Apple and Blue Cheese Salad with Candied Pecans
This Apple and Blue Cheese Salad with Candied Pecans is the perfect combination of sweet and salty. Sprinkled with crispy apple slices, salty blue cheese and the sweet crunch of candied pecans, it's the perfect light and crispy salad! Topped with a simple lemon and honey vinaigrette, it is the perfect winter salad to get your New Year started off right!
Ingredients
For the Salad:
- 6 cups mixed greens (I used arugala)
- 1 apple, thinly sliced (we like honeycrisp)
- ½ cup crumbled blue cheese
- ½ cup candied pecans
- ¼ cup dried cherries (can substitute dried cranberries)
For the Vinaigrette:
- ¼ cup freshly squeezed lemon juice
- ¼ cup extra virgin olive oil
- 1 tsp dijon mustard
- 1 tbsp honey
Instructions
- Place salad greens in a large salad bowl. Top with apple slices, blue cheese, pecans, and dried cherries.
- For the vinaigrette, using a small bowl, whisk together the lemon juice, dijon mustard, and honey. Slowly add the olive oil, whisking constantly until the vinaigrette is fully emulsified. (See note).
- Drizzle salad dressing over top of the salad and toss. Serve immediately. Enjoy!
Notes
Note: If honey is not combining well, heat in microwave for 30 seconds and stir.
